Strawberry Pancakes

Here I am, on this rainy day, cozy and warm in my sweat pants, fuzzy slippers, and big sweatshirt, listening to the new Feist CD. I'm sitting on the couch in my apartment (where I just discovered a leak in the roof, I may add) working on a report about Ukraine that I will be presenting tomorrow night in one of my classes. I love days like today. Days where I can just sit by the window and watch the rain fall. Days where I give myself permission to make strawberry pancakes and eat them for lunch just because it's a rainy, lazy day. I am thankful for rainy days.

National Coffee Day

I am not supposed to drink coffee. The PH of my mouth is very acidic (if you don't understand what that means, Google it!), and coffee is one of those beverages that I am supposed to abstain from in order to be happier, healthier, and live longer (so the doctor says). However, I am in college and every once in a while, I just NEED that coffee fix. So, on those rare occasions, I make an exception to my "eat healthy so your teeth don't rot away" rule. Today was one of those days. I allowed myself to have some delicious coffee because it was FREE at 7-11! Today is National Coffee Day! :D Here is the story of how coffee came about...

Where did coffee come from? A group of hopped-up goats.

"According to the National Coffee Association, an Ethio­pian goat herder named Kaldi was the first to realize coffee’s wonders: “It is said that he discovered coffee after noticing that his goats, upon eating berries from a certain tree, became so spirited that they did not want to sleep at night.”

Today, those berries are then harvested and processed, the beans dried, milled and exported, the coffee tasted, roasted, ground and brewed — all to get to that steaming mug in front of you."

Questions, Questions

It's that time again. The stress of a new semester is finally starting to hit me, and I feel the urge to write a blog. It is my Senior year (woo hoo)!! One more semester at Biola and I will be an official degree holder. This time of my life is both exciting and nerve-wracking at the same time. Where will I work? Have I had enough education to be ready to start working? Where will I go to grad school? Will I even get into grad school? When am I supposed to get married? Will I still have time to do the things that I love? I feel like there are so many unknowns in my life right now and that absolutely and totally scares me. I was talking to my boyfriend last week about some of the things that are running through my head right now and out of his pocket he pulled a notecard with the words "Be anxious for nothing. God is in control." What good advice! It is so hard for me to let go of the stressing questions and occurrences in my life, to take a step back, and to let God lead. I am so glad that there is a God who is in control of my life. He knows where I will be in a week, in five years, and in twenty years. This is my prayer for this semester. To never be anxious, and to remember that God knows what I need.

"Be anxious for nothing, but in everything by prayer and supplication with thanksgiving let your requests be made known to God" Philippians 4:6 (NASB)
